The Manuka bush, scientifically known as Leptospermum scoparium, thrives in remote regions of both Tasmania and New Zealand. Manuka honey has a longstanding reputation for its antibacterial properties, and in 2006, scientists identified Methylglyoxal as the primary antibacterial compound naturally occurring in Manuka honey.

In contrast, the pristine rainforests of Tasmania are the exclusive global habitat for the rare Leatherwood tree, scientifically referred to as Eucryphia lucida. Since 1955, our family has had the privilege of procuring this highly sought-after honey from the heart of the Tarkine wilderness. This area is renowned for its ancient forests and is celebrated for having the cleanest air and water on Earth.

Blue Hills Honey utilizes a cold extraction method to preserve all the natural components of the honey.
