Description

Product description

Blue Hills Honey and 41 South have collaborated to create a premium creamed style honey infused with the natural goodness of Mountain Pepper berry (Tasmannia lanceolata). These pepper berries grow in the cool climate regions of southern Tasmania, New South Wales (NSW), and Victoria.

This small tree can reach up to 5 meters in height, with only the female trees bearing fruit. The berries resemble small fruits, initially dark red and maturing to a black hue.

Traditionally, Mountain Pepper was cherished for its antiseptic properties and its unique flavor. Both the leaves and berries were used for various purposes. Indigenous people used crushed berries and water to make a paste, which was applied to treat sore gums and toothaches. Additionally, it served as a flavor enhancer when added to food.

Blue Hills Honey utilizes a cold extraction method to preserve all the natural components of the honey.

Leatherwood & Pepper Berry Bold and Distinctive, Earthy & Spicy Overtones of Musk and Exotic Spices with ahint of warmth. From the Heart of the Tarkine Wilderness

Health Benifits

Mountain Pepper is a native species renowned for its exceptionally high antioxidant capacity, surpassing even the globally acclaimed blueberry in this aspect. Antioxidants are associated with the prevention or delay of conditions like cancer, diabetes, Alzheimer's disease, autoimmune disorders, and cardiovascular diseases.

These berries are rich in essential nutrients such as vitamin E, lutein (beneficial for eye health), zinc, magnesium, and calcium. Notably, they contain polygodial, a compound with anti-inflammatory properties that can be beneficial for conditions like arthritis, asthma, and the alleviation of gut irritability. Polygodial also serves to protect the stomach lining from pathogens and inflammatory markers.

Furthermore, both the berries and leaves contribute to the gradual absorption of glucose from the stomach, promoting the stabilization of blood sugar levels.

Taste & Smell

Blue Hills Honey and 41° South have joined forces to create a pure and exquisite Leatherwood honey infused with the essence of Pepperberry. The resulting honey, blended with Pepper Berry essence, boasts a robust earthy and spicy flavor profile.

The Pepper Berry is renowned for its "hot" flavor, attributed to the polygodial properties it contains. It offers a fruity initial taste, followed by a spiciness that imparts a hint of warmth. This unique and spicy flavor harmonizes exceptionally well with the exotic and spicy notes of Tasmanian Leatherwood Honey. Presented in a luxurious creamed style, this collaboration promises an outstanding taste experience.

Food Uses

Mountain Pepperberry, in both its berry and honey forms, offers versatile applications in both sweet and savory culinary creations. The berries not only contribute to the honey's subtle pink hue but can also be employed to enrich the color and aroma of marinades, sauces, soups, and vinaigrettes. Additionally, the honey serves as an excellent ingredient in desserts like ice creams, yoghurts, and jelly, providing a distinctive and savory twist to your sweet treats.

Try it in curries or pair it with port and a strong cheese for a night cap

For optimal flavor, consider pairing Tasmanian cheese, particularly the blue cheese from King Island, with a drizzle of this honey. It also works wonderfully when used as a marinade for red meat.
