Blue Hills Honey and 41° South have joined forces to create a pure and exquisite Leatherwood honey infused with Panax Ginseng. Ginseng is a slow-growing perennial plant with fleshy roots, primarily cultivated in the cool climate regions of China, Korea, and other parts of Eastern Asia. The English word "ginseng" is derived from the Chinese term "man-root," which describes the characteristic forked shape of the highly prized root, resembling human legs. Ginseng roots are typically harvested between 7 and 15 years of age.

Our Leatherwood Honey is exclusive to Tasmania, sourced from the heart of the Tarkine wilderness, a remote and pristine area known for having the world's cleanest air and water. Blue Hills is the exclusive apiary with access to this region, where only 20 people per year are granted access, and the Blue Hills family comprises half of them.

Tasmania is renowned for its exceptionally clean environment and pristine wilderness heritage areas. Pollution-free winds travel thousands of kilometers across the vast Southern Ocean before reaching Tasmania's shores. Cape Grim, situated on the island's northwest corner, houses a monitoring station that captures the world's purest air. This monitoring station serves as the global benchmark for pollution levels.

Are there any impurities in your honey and what are the specs?

During the extraction process of the honey there are not a lot of impurities.The natural beeswax is removed by a wax centrifuge. From here the honey is coarse filtered (1000 micron) andthen the raw honey settles in a closed vat overnight. We then place the raw honey in the 300kg drums for storage.The honey is only harvested in Tasmania in the months of January, February and March.When required we melt the honey (always below 45°C). The honey then goes through a 300 micron filter to a hold-ing vat for packing. This is regarded as a coarse filtering and you will still see the occasional propolis spec in thehoney. To filter finer would remove the natural pollen and we feel change the flavour and structure of the honey(not a natural honey). The ginseng may add some particles from the raw Ginseng.

 

Note: Jar of each variety , plastic spoons (separate spoon for each tasting and not wooden as itchanges the taste of the honey), disposal bin for used spoons, napkins (for client), surfaceantiseptic for bench and demonstrators hands as there are usually honey spills.
