Tasmania is home to an exceptional honey that is found exclusively within the heart of the pristine Tarkine wilderness, a remote area bathed in the world's purest air and water. Access to this region is a privilege held solely by our exclusive apiary, with only 20 individuals granted this access each year, half of whom belong to the Blue Hills family.

Tasmania, blessed with the cleanest air and water globally, is renowned for its extraordinarily pure environment and its vast wilderness heritage areas. Unpolluted winds travel thousands of kilometers across the vast Southern Ocean before reaching Tasmania's shores.

Cape Grim, situated in the northwest corner of the island, hosts a monitoring station that captures the purest air in the world. This monitoring station serves as the global reference point for measuring pollution levels worldwide.

 

Blue Hills Honey utilizes a cold extraction method to preserve all the natural components of the honey.

In a dry, dark cupboard away from direct sunlight.

 

How do we reliquefy the honey?

  1. Place the jar in a warm oven (less than 45°C) until liquid. This can take up to 2 hours.
  2. Place the jar in a pot of warm water (loose lid) on the stove (again less than 45°C) until liquid.
  3. Honey in the candy form isa favourite for the beekeepers themselves to eat

When remelting your honey please remember to minimise the exposure to the heat source.

 

Are there any impurities in your honey and what are the specs?

During the extraction process there are not a lot of impurities.The natural beeswax is removed by a wax centrifuge. From here the honey is coarse filtered (1000 micron) andthen the raw honey settles in a closed vat overnight. We then place the raw honey in the 300kg drums for storage.The honey is only harvested in Tasmania in the months of January, February and March.When required we melt the honey (always below 45°C). The honey then goes through a 300 micron filter to aholding vat for packing. This is regarded as a coarse filtering and you will still see the occasional propolis spec inthe honey. To filter finer would remove the natural pollen and we feel change the flavour and structure of thehoney (not a natural honey).

TA10+ is regarded as beneficial, <10 is food grade. Is best kept below 10°C to preserve thenatural activity. Heat and time may deteriorate the indicated activity of the honey as perthe label. Available in 10+ / 15+ (250g and 500g

 

Note: Jar of each variety , plastic spoons (separate spoon for each tasting and not wooden as itchanges the taste of the honey), disposal bin for used spoons, napkins (for client), surfaceantiseptic for bench and demonstrators hands as there are usually honey spills.
