Product description
Blue Hills Blackberry Honey is a rare and treasured delicacy with deep roots in Tasmania's history. Introduced by early European settlers, the blackberry bush (Rubus fruticosus) quickly became renowned for its succulent, sweet fruit, once flourishing across the Tasmanian landscape. Today, the sight of large, wild blackberry stands is a rarity, making this honey a true gem.
Produced by one of the few remaining beekeeping families who harvest from these elusive wild blackberries, Blue Hills Blackberry Honey offers a taste experience like no other. This genuine blackberry honey is celebrated for its exceptionally light and delicate flavor, paired with a subtle, yet enchanting aroma. The meticulous process of collecting and crafting this honey ensures that every jar encapsulates the essence of Tasmania's natural beauty and the unique character of its wild blackberries. Whether enjoyed on a warm slice of bread or incorporated into recipes, Blue Hills Blackberry Honey brings a touch of Tasmanian heritage and a refined sweetness to your table.

Are there any impurities in your honey and what are the specs?
During the extraction process of the honey there are not a lot of impurities. The natural beeswax is removed by a wax centrifuge. From here the honey is coarse filtered (1000 micron) andthen the raw honey settles in a closed vat overnight. We then place the raw honey in the 300kg drums for storage. The honey is only harvested in Tasmania in the months of January, February and March. When required we melt the honey (always below 45°C). The honey then goes through a 300 micron filter to a hold-ing vat for packing. This is regarded as a coarse filtering and you will still see the occasional propolis spec in thehoney. To filter finer would remove the natural pollen and we feel change the flavour and structure of the honey(not a natural honey). The ginseng may add some particles from the raw Ginseng.
Note: Jar of each variety , plastic spoons (separate spoon for each tasting and not wooden as it changes the taste of the honey), disposal bin for used spoons, napkins (for client), surfaceantiseptic for bench and demonstrators hands as there are usually honey spills.
