Candied Wildflower Honey

In early 2023, while harvesting Leatherwood honey on Tasmania’s West Coast, our beekeepers encountered an unexpected bounty. Alongside the Leatherwood blossoms were Manuka flowers and towering Eucalyptus trees, creating a unique floral tapestry.

Recent climate changes have led to simultaneous flowering of different plants, making it difficult for us beekeepers to separate distinct floral sources in our honey. During extraction, we immediately noticed a unique aroma emanating from the hive frames, revealing that this honey was different from the usual Leatherwood harvest.

Upon tasting, we unanimously agreed that this extraordinary honey deserved its own spotlight. Thus, our Wildflower Honey was born—capturing the remarkable blend of Tasmania’s diverse flora in every jar.
