Candied Blue Gum honey is Tasmania’s floral emblem transformed into a delectable treat. This rare honey is harvested from the Blue Gum trees, which flower infrequently, sometimes only once every few years. Originally found only in Southeast Tasmania, the range of these trees has been significantly reduced due to land clearing.

Despite its light and creamy texture, Blue Gum honey boasts a rich and robust flavor, making it an ideal complement to bread, crumpets, and other baked goods.
